In one of Sabrine's early videos, she considered herself as Vietnamese, but in most of her films, she exposed herself as Filipino. Sabrine participated in lots of sports growing up, including track, tennis, volleyball and basketball. She moved with her family to Hawaii at the age of 15, where she graduated from high school.

Sabrine Maui started modeling when she turned 18 to pay for nursing college. Sabrine Maui comes from a family of doctors and nurses. She continued her modeling work when her family moved to Los Angeles.  Maui transitioned from nude modeling to adult films in 2000. Her first scene, in Asian Dolls Uncut 7 (2000) was promoted as her losing her viriginity on film, she was filmed "losing her virginity" to adult star Don Fernando. She had an ongoing relationship with Fernando until 2002.  She was nominated for the 2003 XRCO Award for Best Sex Scene, Couple, with Jules Jordan in Trained Teens 2, and won the Unsung Siren award.

She quit pornographic films during 2005 to attend college full-time, and returned to performing in 2006.  As of April 2007, Maui is currently attending college pursuing a nursing degree and at the same time is still actively performing and is under a non-exclusive 6 feature movie contract with New Sensations.
